Warm Brussel Sprout Salad with Dressing
When I was a kid in all the movies the kids were trying to be forced to eat brussel spouts and they always said they were disgusting, so I never ate them. I just simply never tried them, thinking they would be completely nasty. Fast forward to being an adult and somewhere at a fancy dinner and was offered brussel sprouts. I remember almost a bit of panic worrying that I would hate them and didn't want to be rude by not eating them.
Well, I FREAKING loved them!
And now I eat them all the time. Usually I’m a fan of in the pan with some olive oil and salt and pepper, or parmesan cheese if I’m getting fancy, but I’ve been playing around with a few different ways of eating the, Especially for lunch. They don't have to be just a dinner food!
This warm brussel sprout and cabbage salad is delicious, nutritious and simple to make. I topped it with a homemade dressing I made (recipe below) but you can use something else you like as well.
Ingredients (Portion for 4-6)
Half a head of green cabbage
4 big handfuls of brussel sprouts
1/4 cup of dried cranberries or cherries
1/4 cup of sunflower or pumpkin seeds
1 tbsp. of olive oil
salt and pepper to taste
2-3 tbsp. dressing (recipe below)
Lets make salad
Heat the olive oil in the pan.
Add brussel sprouts cut into quarters and cabbage cut into shorten strips.
Saute sprouts and cabbage until soft. I like to add a bit of water to the pan to keep them from browning to much.
When softened, toss in dressing and garnish with seeds and dried cranberries.
For the dressing
2tbsp oil. I really like the locally made Hemp Oil from Mighty Trio
2 tbsp. balsamic vinegar
1 tbsp. honey
1 garlic clove chopped well
toss in a jar and shake!
